Buns

  • 3/4 to 1 cup lukewarm water
  • 2 tablespoons butter
  • 1 large egg
  • 3 1/2 cups Unbleached All-Purpose Flour
  • 1/4 cup sugar
  • 1 1/4 teaspoons salt
  • 1 tablespoon instant yeast or fast rise

Directions

  1. Mix and knead all of the dough ingredients — by hand, mixer, or bread machine. We use a stand mixer. Put all the ingredients in mixing bowl in this order:  . Put all the ingredients in mixing bowl in this order: 
  In a small bowl add yeast, about 1/4 of your water and a small amount of the sugar. Let yeast work for about 5 minutes, it should be bubbly.Cover the dough, and let it rise for 1 to 2 hours, or until it's nearly doubled in bulk.
  1. Add remainder of water to mixing bowl
  2. Add melted butter to bowl
  3. Add flour and salt to bowl
  4. Add egg to bowl
  5. Make small well in flour and add yeast mixture. 
      Use dough hook on mixer. Turn on low for one minute, turn off and check the dough to see if it is to sticky or to dry. Adjust by adding water one tablespoon at a time . Turn mixer on low and mix and kneed for 5 minutes. Put in a greased bowl and let rise in a warm place for 1 hour.

After dough has double in size punch down and form into 65 grams for each bun. Take each piece and smooth and make into a bun 2- 3/4 inch wide and about 1/2 inch thick. Place on lightly greased baking pans at least 1 inch apart. (six on a tray). Use two pans. Coat buns with egg wash (one egg with 1 tablespoons water) sprinkle with sesame seed. Put in cold over with light on and let rise for 1 hr. Take out of oven after risen and set oven to 375. When  oven has reached temp place buns in oven one pan on middle rack and one directly under the first one. Bake for 15 minutes or until golden brown. Cool on rack. Freeze for later use.

The amount of water needed depents on the humidity. In the summer with the air-conditioner on us 1 cup of water and in the winter start off with 3/4 cups of water Check the dough and add more water, 1 tablespoon at a time, if dough is dry. Add water until dough is just past not being sticky.

If frozen, thaw by putting in the microwave for 30 seconds and then in a toaster oven until warm and brown.

FOR BREAD
After first rise form into one large loaf or two small loafs on a greased baking sheet. Or you can cut dough in half and make one loaf bread and use other half for rolls. Coat bread with egg wash and sprinkle with sesame seeds. Let rise in a warm place for 1 hour. Bake at 375 or 25 minutes.
