MOMMA’S SPAGHETTI SAUCE

Ingredients
                   1
3 tablespoons olive oil
1 medium onion, minced
1 red or green bell pepper, minced
1 stalk of celery, scraped and minced
4 cloves of garlic, sliced
1 Italian sausage, chopped                                                                              ______________________________

1/3 cup red wine
1/4 cup balsamic vinegar

2 tablespoons of butter, unsalted

2– 28 cans diced tomatoes
1 cup fresh mushrooms, sliced
6 black olives, sliced

1 teaspoons sugar
1 teaspoon basil, chopped, fresh or dried
1 teaspoon oregano, chopped
1 teaspoons thyme
3 whole bay leaves
1 can chicken broth
1/2 cup black coffee
1 tablespoon lemon juice
Salt and pepper to taste

Heat olive oil in a 10” skillet and add onion, bell pepper, garlic, celery, and Italian sausage. Cook until sausage is brown. Stir well and add salt. Cover. Reduce heat and cook 6 to 8 minutes.

Uncover and add wine and balsamic vinegar and cook 6 to 8 minutes.

Add butter and stir, cover and cook 2 to 3 minutes.

Add both cans of tomatoes, black olives and mushrooms, stir.

Add spices, chicken broth, coffee, lemon juice and salt and pepper, stir. Cook for at least one hour on low, or until reduced and thick. You never want runny liquid running over your plate. Use a submergible blender or regular blender and blend to your choice of texture.
